4 bay leaves
1 scant tsp cloves
2 cinnamon sticks
1 litre olive oil
Rinse the bay leaves and gently pat them dry on a towel. Put the bay, the cloves and the cinnamon into a glass bottle. Fill it up with olive oil, leaving a little space at the top. Shut the bottle with an airtight cap, and store in a cool dark place for 20 days. After 20 days have passed, pour the oil into a fresh bottle, careful to remove the herbs and spices.
