Vegan Orange Cake

Ingredients
  • ¾ cup (200ml) olive oil
  • 1 cup (250ml) fresh orange juice
  • ⅓ cup (90ml) carob syrup
  • ⅓ cup (85ml) water
  • 1 teaspoon (5ml) vanilla extract
  • 1 cup (230g) sugar
  • 2 tablespoons (10g) orange zest
  • 2 ½ cups (375g) self-raising flour
  • 1 teaspoon (8g) baking powder
  • ½ teaspoon (2g) baking soda
  • Icing sugar, for serving
Method
  1.  Preheat the oven to 180°C (fan).
  2. Grease and flour a loaf pan measuring 11x32 cm.
  3. In a large bowl, whisk together the olive oil, orange juice, carob syrup, water, and vanilla extract. Add the sugar, orange zest, flour, baking powder, and baking soda. Mix well until smooth.
  4. Pour the batter into the prepared pan and bake for 45 minutes. To check if it’s done, insert a wooden skewer into the center of the cake — if it comes out clean, remove it from the oven.
  5. Allow the cake to cool completely, remove from the pan, and dust with icing sugar before serving.
