For the ginger bread

  • 190g all-purpose flour
  • 1tsp baking soda
  • 2tsp ginger powder
  • 2tsp cinnamon powder
  • 1tsp clove powder
  • 1/2tsp nutmeg powder
  • 75g melted unsalted butter
  • 150g brown sugar
  • 125g pomegranate syrup
  • 117ml hot water
  • 1 egg
  • 30g walnuts

For the frosting

  • 150g unsalted butter at room temperature¬†
  • 150g cream cheese
  • 50g mascarpone
  • 1tbsp vanilla essence
  • 100g icing sugar

For garnish

  • 40g walnuts
  1. Place the flour, baking soda, ginger, cinnamon, cloves and nutmeg in a bowl. Mix well with a whisk.
  2. In another bowl, add the brown sugar and the egg. Beat with a whisk very well and add the melted butter. Mix and then add the pomegranate syrup and the hot water. Continue mixing so that the egg does not separate.
  3. Then sift the solid ingredients into the bowl with the liquid ingredients and mix.
  4. In a small blender, break the walnuts into small pieces and add them to the mixture.
  5. Transfer to a tray with baking paper and bake in a preheated oven at 190 degrees for 30 minutes.

For the frosting

  1. Add all the ingredients into the mixer bowl and beat with the whisk until you have a smooth texture.
  2. Transfer to a pastry bag.
