Stuffed turkey leg

Ingredients

For the turkey:

  • 1 turkey thigh
  • 1 tsp paprika
  • 1 tsp nutmeg
  • 35g raisin
  • 20g pine nuts 
  • 300g bacon (10 thick slices)
  • 2 sprigs rosemary (leaves only)
  • Salt
  • Pepper

For the mousse:

  • 200g turkey breast
  • 50g chicken liver
  • Zest of a mandarin, half of an orange and half of a lemon
  • 1 tbsp worcestershire sauce
  • 20g fresh cream
  • 1 egg white
  • Salt
  • Pepper

For garnish:

  • Yellow mustard
  • Zest of lemon and orang
Method

For the mousse:

  1. Place all the ingredients in the blender and blend very well.

For the turkey:

  1. Remove the bone and skin from the turkey leg.
  2. Cover with a film and beat with the meat mallet until it acquires a uniform shape and thickness. We leave aside.
  3. Open the film and place the bacon one slice touching next to the other.
  4. Place the turkey leg on top of the bacon.
  5. Add salt, pepper, nutmeg and chopped rosemary all over the turkey.
  6. Then spread the mousse evenly over the entire surface of the turkey.
  7. Sprinkle the raisins and pine nuts on top.
  8. Wrap carefully and tightly with the film to create a roll.
  9. Then cover with aluminum foil and place in a pan with a little water.
  10. Bake in the oven at 170 degrees in the air for 1.5 hours.
  11. Remove the aluminum foil and the film.
  12. Heat a pan with olive oil and sauté very well the entire surface of the roll.
  13. Cut into thick slices and serve.
  14. Garnish with mustard and citrus zest.
