Cuttlefish in Wine Sauce

A delicious dish, perfect for Lent!
 
Ingredients:
 
½ teeming cup olive oil
1 kilo yellow onion, thinly sliced or chopped
5 cloves garlic, sliced
1 kilo cuttlefish or calamari
1 teeming cup dry white wine
3 tbsp tomato paste lightly diluted with water
2 bay leaves
salt & pepper to taste
1 pinch sugar
 
Directions:
 
Warm up the olive oil in a pan or a large pot. Caramelize the onions and the garlic and then immediately throw in the cuttlefish and stir vigorously. Douse with the white wine and allow the alcohol to boil off for a few minutes.
 
Next add the tomato paste, along with the sugar to cut the tomato flavor a bit, the bay leaves, and a few dashes of pepper. Cover and simmer until most of the liquid is gone and only the oil remains.
 
Lastly, remove the bay leaves, set the table and enjoy a fantastic family meal this Lent!
