1. Roasted oven baked potato wedges
A very easy and healthy recipe for potato wedges, without much oil
Ingredients (4 portions):
8 large potatoes
2 tbsps wholegrain mustard
50 ml soy sauce
10 ml olive oil
1 tbsp. molasses
1 tsp. dried thyme
1 tsp. oregano
2 tbsp. parsley, chopped
2 tsp. smoked sweet paprika
2 tsp. freshly ground pepper
Method:
Wash the potatoes well, but do not remove the skins. Cut them lengthwise and again until they are wedge-shaped. In a bowl, mix well all the marinade ingredients. Pour the potatoes in and mix well until the potatoes are covered in spices. Place a large baking sheet on a tray and spread the potatoes on it. Bake for 40-45 minutes at 180C, stirring them halfway through.
If you wish, garnish with chopped parsley and serve.
2. A Mediterranean inspired yoghurt dip:
This delightful dip, a variation of tzatziki, is something different than plain yoghurt and will compliment well the flavours and aromas of the grilled meat.
Ingredients:
500g strained yoghurt
50 ml olive oil
50 ml cream of balsamic vinegar with citrus flavors
50 ml orange juice
2 garlic cloves, minced
2 scallions, finely chopped
4 tbsps. capers
3 tbsps. fresh mint
3 tbsps fresh oregano
3 tbsps. fresh thyme
3 tbsps parsley, chopped
Method:
Finely chop thyme, oregano and mince the two garlic cloves. Mix all the ingredients in a bowl. Add the capers and the chopped scallions. Mix them gently and garnish with some chopped parsley. Serve it along the grilled meat and the potato wedges!
