Ingredients

1 1/2 cups (150g) potatoes cut in cubes
1 1/2  cups (225g) carrots cut in the middle and then in thick slices
2 cups (200g) zucchinis cut in the middle and then in thick slices
1 cup (170g) sliced artichoke
2 cups (400g) tomatoes sliced in cubes
2 cups (200g) sliced onions
2/3 cup (150g) carolina rice
1/2 cup (120ml) olive oil
1 tbsp (6g) cumin
2 tsp (16g) salt
½ tsp black pepper
2 cups (500ml) hot water

 

Method

In an oven pan add: the potatoes, carrots, zucchinis, artichoke, tomatoes, onions, rice (after washing and draining well), the olive oil, cumin, and the salt and pepper.
Stir well and add the water. Cover with non-stick paper and aluminum foil. Cook in a preheated oven at 180°C for 1 hour and 20 minutes. Uncover the pan and continue cooking for another 15-30 minutes or until food becomes golden-brown. Stir occasionally. Remove the pan from the oven, stir and serve!
