Pan fried squid with feta, olive oil and lemon

Ingredients

1 kg fresh squid 
1 clove of garlic
1 white onion 
Fresh thyme 
1 tbsp dried oregano
Zest from 1 lemon
Juice from 1 lemon 
1 tbsp Dijon mustard 
70 ml olive oil
1 fresh chili (piece) 
5g dill
30g feta 
1 spring onion (fresh)
1 tbsp honey
Rucola leaves

 

Method
1. Clean the squid and carve its inside.
2. Warm up a grill pan and add 2 tablespoons of olive oil to sauté squid.
3. Add onion, garlic and thyme and sauté along with the squid.
4. Using a hand blender, blend olive oil, mustard, honey, lemon juice and finely chopped dill.
5. Just before taking squid out of the pan, add lemon zest and oregano. 
6. Serve, drizzle with the sauce and garnish with some feta on top of calamari, rucola leaves and dill tips.
