For the dressing:
1. Place all the ingredients in a dispenser and mash with a hand blender.
For the salad:
1. Finely chop the walnuts on a cutting board.
2. Heat a non-stick pan and roast the pumpkin seeds and walnuts.
3. Remove from the pan and let cool.
4. Cut the strawberries into thin slices.
5. In a bowl add all the ingredients for the salad. Leave 5-6 slices of strawberry for garnish. Add 2-3 tablespoons of the dressing and with a glove, mix well.
6. Serve and garnish with the strawberries.
