1 kilo pork mincemeat
2 cups (290gr) onion finely chopped
1 2/3 cups (100gr) parsley finely chopped
1/3 cups (90ml) vegetable oil (corn oil etc)
1 teaspoon full (6 gr) ground cinnamon 
½  teaspoon ground black pepper
2 teaspoons (16gr) salt
2 cups(100gr) stale bread only the inside soft part cut into cubes
1 cup (250 ml) water
2 pieces (200gr) caul fat or panna (as it called in Cyprus)
½ espresso cup vinegar


In a bowl add the water and the vinegar. Place inside the caul fat and let it soak for 10’. After that wash with clean water and strain it.
Place the bread in a separate bowl and add some water. Let it soak for a while.
In a bowl add the mincemeat, onion, parsley, vegetable oil, cinnamon, ground pepper, salt and mix all together well. Drain the bread and add it to the mixture and continue the mixing
