Noodles with Chicken and Vegetables

  • ½ package (200 g) of noodles
  • 2 pieces (600-700g) of chicken breast, thinly sliced
  • 2 tablespoons of olive oil
  • 3 cloves of garlic, finely chopped
  • 1 tablespoon of fresh ginger, grated
  • 1 red pepper, thinly sliced
  • 1 cup carrot, thinly sliced
  • 1½ cups of Krabi cabbage, thinly sliced with a mandolin
  • 1 cup of soy sauce
  • 3 tablespoons of oyster sauce
  • 2 tablespoons of sesame oil
  • Thinly sliced fresh onions and sesame seeds for garnish
Heat a tablespoon of olive oil in a pan, and when it's hot, sauté the chicken until it turns white and is fully cooked. Remove the chicken from the pan and set it aside.
In the same pan, add the remaining tablespoon of olive oil and sauté the garlic and ginger for a few seconds. Then, add the red pepper, carrot, and cabbage. Sauté them until the vegetables become tender, then add the cooked chicken back into the pan and mix everything together.
In a separate bowl, combine the soy sauce, oyster sauce, and sesame oil to create the sauce. Boil a large pot of water, add the noodles, and turn off the heat. Cover the pot with a lid and let the noodles soften according to the package instructions. Drain the cooked noodles and add them to the vegetable and chicken mixture. Pour the prepared sauce over the noodles and toss everything together. Serve the dish garnished with thinly sliced fresh onions and sesame seeds.
