Ingredients

800g large shrimps,with their shell on
⅓  cup finely chopped fresh flat-leaf parsley 
1 tbsp grated lemon peel 
1 tbsp fresh oregano, finely chopped 
1 tsp minced garlic
 2 ½  tbsps olive oil, divided 
1 tbsp honey 
½  tsp freshly ground black pepper 
¼  tsp salt 
Cooking spray 
1 ½  tbsps red wine vinegar

 

Method

Preheat the grill to medium-high heat.
Combine chopped parsley, grated lemon rind, chopped fresh oregano and minced garlic in a small bowl.

 

Combine shrimp, 1 table­spoon of olive oil, honey, pepper, and salt in a large bowl and toss gently to coat. Arrange shrimp on a grill rack coated with cooking spray. Grill 5 minutes on each side or until done.

 

Remove shrimp from the grill.
Stir the remaining 1 1/2 tablespoons oil and vinegar into the herb mixture. Top shrimp with herb mixture, or toss all together.
