Ingredients
  • 1 cup (200 g) red lentils
  • ¼ cup (65 ml) olive oil
  • 1 cup (150 g) onion, finely chopped
  • ½ cup (55 g) spring onions, finely chopped
  • 1 cup (100 g) finely grated carrot
  • 1 cup (150 g) finely grated courgettes
  • ½ cup (50 g) celery, cut into small cubes
  • 1 cup (240 g) finely grated potato
  • 2 garlic cloves, finely chopped
  • 1 tablespoon (25 g) tomato paste
  • 1 level teaspoon (3 g) ground cumin
  • ½ teaspoon (2 g) sweet smoked paprika
  • 1 bay leaf
  • 9 cups (2,250 ml) water
  • 1½ cups (90 g) spinach, finely chopped
  • ⅓ cup (25 g) fresh coriander or parsley, finely chopped
  • ⅓ cup (85 ml) lemon juice
  • 1½ teaspoons (12 g) salt
  • ⅓ teaspoon black pepper
Method
  1. Rinse the red lentils thoroughly under running water and leave them to drain.
  2. Heat the olive oil in a large saucepan over medium heat. Add the onion and spring onions and sauté for approximately 3 minutes, until they begin to soften.
  3. Add the carrot, courgettes, celery and potato. Stir and sauté for 3–4 minutes to release the aromas of the vegetables.
  4. Add the garlic, tomato paste, cumin and paprika. Stir, then add the red lentils, bay leaf and water. Mix well and bring the soup to the boil.
  5. Reduce the heat and simmer for 30 minutes with the saucepan partially covered, until the vegetables are tender and the lentils begin to break down. Stir occasionally and add a little hot water if necessary.
  6. Add the spinach, coriander or parsley, salt and pepper. Continue cooking for another 10–15 minutes.
  7. Stir in the lemon juice and remove the saucepan from the heat. Allow the soup to rest for 5 minutes, then serve hot.
