Middle Eastern Beef Rolls

Ingredients

For the beef filling

  • ½ kg finely ground beef
  • 3 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tablespoon tomato paste
  • ½ teaspoon paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon 7-Spice mix or allspice
  • ½ teaspoon ground coriander
  • 1 tablespoon carob syrup or honey
  • 2 tablespoons sheep’s yogurt
  • 2–3 tablespoons water or vegetable stock
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup chopped fresh parsley
  •  
  • For the wraps
  • 3 large tortilla wraps
  • 4 tablespoons olive oil

 

For the yogurt dip

  • 4 tablespoons sheep’s yogurt
  • 2 tablespoons ready-made tahini dip
  • 2 tablespoons fresh mint, finely chopped
  • 1 tablespoon lemon juice
  • 1 garlic clove, minced
  • ⅓ teaspoon salt
  • 1–2 tablespoons water
Method
  1. Heat the olive oil in a pan and add the chopped onion with a pinch of salt to help release its moisture. Once it starts to caramelize, add the garlic and stir briefly. Remove from heat and set aside.
  2. In a bowl, combine the ground beef with the tomato paste, paprika, cumin, 7-Spice mix, coriander, carob syrup, yogurt, water or stock, remaining salt and pepper, chopped parsley, and the onion mixture. Mix for about 5 minutes until the filling is fluffy and well-combined.
  3. Trim about 1–2 cm off the short edges of each tortilla so they roll evenly. Spread one-third of the meat mixture over one tortilla, pressing with your fingers to spread it evenly. Roll it up tightly and place seam-side down. Repeat with the remaining tortillas and beef mixture.
  4. Line the three tortilla rolls side by side. Insert 8 wooden skewers across them at ~2 cm intervals. Slice between the skewers so each skewer holds 3 pieces.
  5. Line a baking tray with parchment paper and place the skewers meat-side up. Brush with olive oil, turn them over, and brush the other side as well. Bake in a preheated oven at 200°C for 10 minutes. Flip and bake for another 10 minutes.
  6. Alternatively, cook in a pan over medium heat for 5 minutes per side, brushing with olive oil as you turn them.
  7. Mix all yogurt dip ingredients in a bowl until smooth.
  8. Serve the beef rolls warm with the yogurt dip on the side.
