The sweetest…witch! chocolate cupcakes with orange frosting

Ingredients (for 18-24)

For the cupcake

1 ¾ cups flour
2 cups sugar
1 cup cocoa
1 ½ tsp baking soda
1 ½ tsp baking powder
1 tsp salt
2 eggs
1 cup milk
½ cup vegetable oil
2 tsp vanilla extract
1 cup boiling water

18-24 brown cases

18-24 witch’s hats for decoration – You can buy black sugar paste, if you wish, and make on your own the witch’s hats!

 

For the frosting

1 cup butter, softened
4 cups powdered sugar
4 tbsp whipping cream
1 tsp orange extract
Orange food colouring, optional
1 package of chocolate truffle sprinkles

 

Method

Preheat oven to 190C. Line cupcake pan with the cupcake cases. Set aside.

In a large bowl, mix together flour, sugar, cocoa, baking soda, baking powder and salt. In another large bowl, stir together eggs, milk, oil and vanilla extract. Add the dry ingredients to the wet ingredients bowl and stir together.
Beat on medium speed for 2 to 3 minutes. Slowly add boiling water and continue to beat. The mixture will be a little runny.
Fill the cupcake liners with the batter about ¾ way full. Bake for 20 to 25 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.
Remove the cupcakes from oven and let cool in the pan for 10 minutes. Carefully transfer cupcakes to a wire baking rack to continue cool.

For the frosting,  in a mixing bowl, beat cream butter and powdered sugar on medium speed. Add in the whipping cream and continue to beat. Add in the orange extract and orange food colouring (if using) and beat until fully incorporated. Scoop frosting into a pastry bag with a large tip. Frost the cupcakes starting at the outside and working towards the center. Sprinkle the truffle sprinkles on top. Place the decoration on the spooky cupcakes and enjoy!

 

Little monsters: Vanilla cupcakes with green frosting
