Spaggetini with Tuna and Ouzo (the summer is still here…)

So you’re looking for an easy dinner idea that can be whipped up in no time at all? One that even the kids will enjoy? Then this recipe’s probably for you.  A decadent tuna pasta dish with a dash of Ouzo inspired flair that is certain to please the entire family.
 
Ingredients:
1 packet of Spaggetini
1 can of Tuna (in oil)
1 can of Tomatoes conserve
3 tablespoons olive oil
3 garlic cloves, chopped
1 red pepper, cut into cubes
½ cup ouzo
1 teaspoon. fresh oregano
1 teaspoon sugar (optional)
3-4 sprigs parsley, chopped
 
Directions:
 
Heat the olive oil in a large nonstick pan (at medium heat) and sauté the cubed red pepper until soft. Next, stir in the garlic and then add the ouzo.  Once evaporated, add tomatoes to the pan and reduce heat to a simmer.  Stir in the remaining ingredients. Cover the sauce and cook for about 15 minutes. 
 
In the meantime, cook the pasta in plenty of salted boiling water according to packet instructions.  
 
While the pasta is boiling, drain the tuna from the oil in the can and break it up into chunks.  Add the tuna to the sauce and heat through.  
 
Once the pasta has cooked, drain it and return it to the pan and stir in the sauce.  Sprinkle parsley on top at the end.  Serve the dish warm - or even at room temperature!
 
Tips:  If you aren’t a massive pasta fan, this dish goes fantastically well with brown rice or even bulgur wheat! If the kids aren’t afraid of a little spice, add some deseeded red chilli or cayenne pepper for extra kick!
