Pork chops with apple sauce

For the pork chops

4 pork chops, bone on
2-3 tbsps olive oil
4 tbsps French mustard 
1 tsp cumin, powder
4 spring onions
1 tsp salt
1  tsp pepper
Oregano to serve


For the sauce

3 apples, peeled and seedless, cut in cubes 
80 g white vinegar 
50 g granulated sugar
1 cinnamon stick
1 star anise pod 
30 g unsalted butter 



Place pork chops in a baking pan and marinate in mustard, cumin, salt and pepper

Preheat oven at 210C and cook pork chop in a baking pan laid with parchment paper.


Heat butter in a pan, add apples and sauté until they get a nice colour. Add cinnamon, star anise and stir in vinegar. Add sugar until melted and turn off heat.

Blend sauce in a blender until it becomes velvety.


​Place pork chops in dishes, chop spring onions and garnish on top before serving.
