Cookies with olive oil and orange

Ingredients
  • 4 fl. (600g) Farina flour
  • 1 teaspoon (8g) of baking powder
  • ½ teaspoon (2g) of cinnamon
  • 2/3 fl. (170ml) olive oil
  • 1 fl. (230g) sugar
  • 1 teaspoon (6g) of baking soda
  • 1 spoon (5g) of orange zest
  • 1/3 fl. (85ml) orange juice
  • ¼ cup (65ml) cognac
  • ¾ cup (140g) boiled sesame
Method

In a bowl, mix the flour, baking powder and cinnamon. In a separate bowl, put the olive oil, sugar and beat with the beater until the sugar melts and becomes like a cream. Add the orange zest. Dissolve the baking soda in the orange juice and add it to the bowl. Add the cognac and the flour mixture little by little. Mix with a spatula. Be careful, it doesn't need much kneading so that the oil doesn't come out of the dough and hardens our cookies.
Divide the dough in half and then into 10 pieces. Each piece should be about 30-35g. Open each piece into a 20 cm stick and dunk it in the sesame seeds. Roll it a little more to make sure that the sesame seeds stick well and cut it into 8 pieces of approximately 2 ½ cm. Place them in pans lined with non-stick greaseproof paper and bake in a preheated oven at 180°C for 20-25 minutes. Let them cool and serve. They will be crispy and delicious!
