Ingredients

For the dough

  • 3 1/3 cups (500 g) all-purpose flour
  • 1 cup (250 ml) lukewarm milk
  • 1/3 cup (75 g) sugar
  • 2 teaspoons (7 g) dry yeast
  • A pinch of salt
  • 1/3 cup (85 ml) melted unsalted butter
  • 1 egg


For the filling

  • ½ pack (125 g) unsalted butter, at room temperature
  • 1 cup (150 g) light brown soft sugar
  • 3 teaspoons (12 g) ground cinnamon


For the cream cheese frosting

  • 1 pack (200 g) cream cheese
  • ½ cup (125 g) unsalted butter, at room temperature
  • 1 ½ cups (250 g) icing sugar
  • 1 tablespoon (10 ml) vanilla extract
Method
  1. Prepare the pan: Line the base of a 26 cm springform pan with non-stick parchment paper and butter the sides.
  2. Activate the yeast: In a small bowl, combine the milk, 1 tablespoon of sugar, and the yeast. Stir and let stand for 10 minutes until foamy.
  3. Make the dough: In a large bowl, mix the flour, remaining sugar, and salt. Add the yeast mixture, egg, and melted butter. Knead for 8–10 minutes until the dough becomes smooth and elastic. Cover and let rise in a warm place for about 1–1½ hours, until doubled in size.
  4. Prepare the filling: In a bowl, mix the butter, brown sugar, and cinnamon until creamy.
  5. Shape the roll: Lightly flour your work surface and roll out the dough into a rectangle about 40×45 cm. Spread the cinnamon filling evenly over the entire surface. Cut into 5–6 cm wide strips.
  6. Form the giant roll: Take the first strip and roll it up into a “snail” shape. Continue wrapping the remaining strips around it to form one large roll. Place it into the prepared pan and gently press to even it out. Cover and let rise for about 40 minutes. Uncover and gently press again to help it spread evenly.
  7. Bake: Bake in a preheated oven at 180°C (350°F) for 35–40 minutes, until golden.
  8. Make the frosting: In a bowl, beat together the cream cheese and butter. Add the icing sugar and vanilla, and whisk until smooth and fluffy.
  9. Finish & serve: Pour half of the frosting over the cinnamon roll while it’s still warm from the oven. Serve with the remaining frosting on top or on the side.
