Calamari with tarama

For the calamari:
300 g baby calamari (whole)
100 ml milk
Juice from half lemon
For the breaded method:
100 g flour
100 g corn flour
1 tsp cayenne pepper
1 tsp paprika 
1 tsp garlic powder
For the frying: 
1 L seed oil 
For the tarama: 
½  red onion 
1  garlic clove 
200 g red tarama 
100 ml lemon juice 
400 g bread without crust
300 ml sunflower oil
For serving:
Slices of lemon
Chopped spring onion


For the breading
1. Place all the ingredients for breading in a bowl and mix well with a whisk.
For the squid
1. Heat the oil about 180°C degrees.
2. Wash the squid well and dry on absorbent paper.
3. Place it in the milk and lemon about 2-3 minutes.
4. Transfer it to the mixture for breading and stir well until completely covered.
5. Fry until it gets golden color. Place on absorbent paper and add a little salt.
For the tarama
1. Remove the crust of the bread and in a bowl soak the bread with a little water.
2. Finely chop the red onion and garlic and sauté  lightly with a little olive oil.
3. Let them cool.
4. In the blender bowl add all the ingredients except sunflower oil.
5. Mash at the high speed and gradually add the sunflower oil.
6. At the end add a little water if necessary. Correct the flavor by adding a little pepper.
