1. Buy the octopuses already cleaned from the fish market. Rinse them thoroughly.
2. In a bowl, combine the olive oil, vinegar and wine and mix well. Add the bay leaves, garlic, black peppercorns and cinnamon sticks.
Place the octopuses in the marinade, cover the bowl with plastic wrap and refrigerate overnight. It is best to turn them once to ensure even marinating.
3. The next day, preheat the oven to 180°C (fan).
Cut a large piece of aluminum foil and place a large sheet of parchment paper on top.
4. Place one octopus on the parchment paper and wrap it tightly into a pouch. Pour over half of the marinade along with the herbs and spices. Seal the pouch well and place it on a baking tray.
Repeat the same process with the remaining octopus and marinade.
5. Bake in the preheated oven for 2 hours. Carefully open the pouch, discard the cooking liquids and serve
