Lamb with Green Beans in Tomato Sauce

Ingredients
  • 1 kg meat (lamb, goat, chicken, or pork), cut into portions
  • 1 kg fresh green beans
  • ½ cup olive oil
  • 1 large onion, finely chopped
  • 3 potatoes, cut into cubes
  • 2 tablespoons tomato paste
  • 2 cups fresh grated tomatoes
  • 2 teaspoons salt
  • ½ teaspoon black pepper
  • 5 cups hot water

 

Method
  1. Start by preparing the green beans. Rinse them thoroughly and place them in a colander to drain. Trim both ends and pull away any strings running along the sides of the beans. If the strings are particularly tough, remove them carefully with a small knife or a bean stringer. Cut the beans into two or three pieces, depending on their size, and remove any remaining strings.
  2. Next, heat the olive oil in a large pot and brown the meat well on all sides, about 7–8 minutes per side. Add the chopped onion and sauté until lightly golden.
  3. Add the potatoes and green beans. Stir the ingredients 2–3 times, then add the tomato paste and grated tomatoes. Allow the tomatoes to cook for a few minutes until some of their liquid evaporates.
  4. Season with salt and black pepper, then pour in the hot water. Cover the pot, reduce the heat to medium-low, and simmer for 1 hour and 30 minutes.
  5. Remove the lid and continue cooking for another 10–15 minutes, allowing the sauce to thicken and become rich and flavorful.
  6. Serve warm and enjoy this comforting traditional dish. ❤️
