Tahini in a salad!

1 packet of whole wheat rotini (spiral) pasta,

1 1/2 cup cherry tomatoes

10-12 fresh basil leavers

2-3 button mushrooms, cut in slices

Red pepper flakes, to taste

For the tahini sauce

1/4 cup tahini

2 tbsps olive oil

1/4 cup water

Juice of one lemon, about 4 tbsps

2 cloves garlic, minced

1/2 tsp salt


Heat a large pot of water over medium heat and cook pasta according to package directions.

Drizzle a little bit of olive oil on a grilling pan and grill the tomatoes on low heat until softened. Do the same with the mushrooms until slightly brown.

For the sauce, add all the dressing ingredients to a large bowl and whisk until combined. Drain the pasta and add it to the bowl along with the tomatoes, mushrooms, basil leaves and red pepper flakes. Mix well and season with salt, to taste, if desired.

Pasta can be served immediately or chilled.
