2 Must Try International Dishes!

Ιt’s World Food Day on 16 October so how about getting adventurous in the kitchen and recreating these two much loved dishes that are popular the world over!
 

Easy Pasta Arrabbiata 

 
One of the most famous Italian pasta dishes that is easy simple to make and full of flavour!
 
Ingredients: (4 people)
 
2 tbsps. olive oil
 
2 cloves garlic, crushed
 
600 g (or 3 x 200 g cartons) passata
 
1 tsp chilli flakes or 1 fresh chilli chopped
 
Fresh basil leaves, chopped
 
500 g. pasta of your choice
 
Grated Parmesan
 
Method:
 
Bring some lightly salted water to boil and then add your pasta and cook for 8 -10 minutes or until al dente. Once cooked, drain your pasta and set aside.
 
In a frying pan, heat your olive oil over medium heat and sauté your garlic until soft. Next, add the passata and chilli flakes or chopped chilli. Simmer until the sauce slightly thickens and then stir in your cooked pasta and chopped basil until properly coated.  Season according to taste and serve with grated Parmesan. Voila! You’re good to go!

Mexican Corn Salad

 
This is not just any corn salad! Called Esquites, this corn-based salad is a staple at Mexican restaurants and just as popular as a street food in the streets Mexico.
 
Ingredients: (4 people)
 
2 tbsps. sunflower
 
3 cups frozen corn (defrosted) 
 
2 tbsps. mayonnaise
 
50 g feta
 
½ cup green onion, chopped
 
½ cup fresh coriander, chopped
 
1 jalapeno pepper, without spores, chopped
 
2 tsp garlic chopped
 
1 tbsp. lime juice
 
Chilli flakes
 
Salt
 
Method:
 
Heat oil in a large non-stick skillet (or wok) on high heat and then add your corn.  Season with salt and cook until one side of the corn has charred.  Keep on tossing every two minutes or so until all sides of the corn have charred.  The whole process should take about 10 minutes.  Once cooked, throw your corn into a large bowl. Add the mayonnaise, feta cheese, fresh onion, cilantro, the jalapeno, garlic, lime juice and chili flakes and mix until blended all together. Add more salt and chilli as desired.
