Crunchy Taco Cups

500gr lean ground beef, browned and drained
2 tablespoon taco seasoning
1 can drained chopped Tomatoes 
1 1/2 cups cheddar cheese, shredded 
24 wonton wrappers or filo pastry cut in small squares 
Sweet corn 1 cup
1 Red bell peppers cut in small cubes 
Parsley ½ cup chopped
1. Preheat oven to 190 degrees C. Generously coat a standard size muffin tin with oil or non-stick cooking spray.
2. Combine cooked beef, taco seasoning, sweet corn, parsley and tomatoes in a bowl and stir to combine. 
3. Line each cup of prepared muffin tin with 2-3 pastry wrapper. 
4. Top with 1 tablespoon of cheese and cubed bell pepper. Bake at 190 for 11-13 minutes until cups are heated through and edges are golden.
Tip. Make sure that the ingredients are well drained and that the pastry wraps are strong enough to hold the mixture.
