Traditional homemade Tahinopitas

Sometimes,  we want to take a break from all things popular, fall on our couches, put on a good movie, a comfy pair of pants, and eat something from our home - something from the heart. On days when your needing the ultimate comfort food, try our special recipe for traditional Tahinopitas!

 

What you will need for 20 small tahinopita pies:

 

For the dough

6 cups of hard flour

2 cups of soft flour

7 gr baking yeast

1 tsp salt

1 cup of sugar (brown or white)

3 tsp of cinnamon

1 pinch of grounded mastic

3 cups of water

 

For the filling

720 gr sesame seed paste (tahini)

3 cups of sugar

3 tsp cinnamon

 

Directions:

Combine both types of flour, the salt, sugar, yeast, cinnamon and mastic ground all in one bowl. Steadily add the water little by little to the mix, and knead accordingly until it becomes a normal, dough consistency, and with a slight shine to it.

 

Next, lay the dough out on parchment paper and allow to rise. While you allow the dough to sit for about 25 minutes, start making the filling by combining the sesame paste, sugar and cinnamon all together in a separate bowl.

 

After the dough becomes soft enough, create 20 mini balls with your dough by rolling them into a ball shape. Take one ball at a time, and flatten out the dough into a rectangular shape of the baking sheet onto the parchment paper.

 

Next, with each square you have made, put about 1 and a half to 2 tablespoons of your Tahini filling inside.

 

Fold one side of the dough sheet 2/3rds over into the centre, and fold the remaining 1/3 into the centre.

 

Then, using your hands roll the square pieces into a rope shape until they are about 60 cm long, then take both ends and twist them circularly, to make the final shape of the tahinopita, a swirl. 

 

Bake your tahinopitas at 175C for about 25-30 minutes or until golden brown. Once they are finished baking, plop right back on the couch, and enjoy a night in with your ultimate comfort food!
