Aromatic Strawberry Cake

4 eggs

200 g sugar

250 g butter

250 g flour

200 g strawberries

220 g raw almond meal

10 g baking powder


For the Strawberry Frosting:

80 g strawberries

230 g powdered sugar



Mix the eggs and sugar in a blender until they fluff up. Melt the butter in a small pot and let cool a bit. Pour butter into the egg mixture, stirring continually with a wooden spoon. Sift half of the flour (125 g), and slowly add it to the egg mixture, stirring all the while.

Blend up the strawberries in a blender and add them to the mixture along with the rest of the flour (125 g), the baking powder and the almond meal.

Butter a cake pan and coat with a thin layer of flour. Pour the mixture into the pan and bake at 180°C for about 45 minutes.


To make the frosting:

Blend the strawberries in a blender and pour into a small pot. Warm them up on a low heat and slowly add the powdered sugar, stirring vigorously until the mixture becomes homogenized into a smooth icing. If necessary, dilute with a little water.
