An Easy Homemade Battered Cod and Chips Recipe

What better way to enjoy your Greek Independence Day celebrations this year than with a scrumptious feast of battered fish and chips!
 
This is a super easy recipe consisting of very few ingredients!
 
And, here’s how we do it.
 
What you will need (for 2 people):
 
450 g cod fillets
 
40 g plain flour
 
40 g corn flour
 
1 tbsp paprika (optional)
 
140 ml sparkling water (or 70 ml beer and 70 ml sparkling water)
 
Salt & pepper (to taste)
 
Cooking oil for frying
 
For the chips:
 
900 g potatoes 
 
3 tbsp plain flour
 
3 tbsp sunflower oil
 
Method:
 
Sift your plain flour, corn flour and paprika into a large bowl, add your salt and pepper seasoning and combine well. 
 
Set aside approximately 2 tablespoons of your flour mix onto a plate.
 
To your bowl, slowly add your beer and sparkling water, stirring continuously with a wooden spoon to ensure that no lumps form in the batter.  The texture of your batter should be that of semi-whipped double cream (it should stick/coat your wooden spoon in other words).  Set aside for approximately half an hour whilst you make your chips.
 
The chips:  Preheat your oven to 200° (fan) or 180° (no fan).  Peel and slice your potatoes into chips and parboil them in a large pot of boiling water for about 4-5 minutes until they are tender but not soft enough to lose their shape.  Then, drain the potatoes and throw them onto a tray with your flour and oil and toss until they are completely coated.  Place in the oven for about 30 minutes until they are golden and crispy (turning a few times during the cooking process). Season with some salt!
 
It’s now time to cook your cod!
 
You will need to heat up about 1 litre of your cooking oil of choice in a deep saucepan.  You’ll know the oil is ready when you throw in a drop of your batter and it sizzles, crisping up immediately.
 
Use some kitchen paper to pat your fish dry, removing any excess moisture.  Next, dust your fish with your reserved paprika flour mix and then dip into your batter (let any surplus batter drip off).  Then slowly lower your fish into the hot oil and fry for approximately 6 – 8 minutes or until the batter is golden and crisp.  Remove your fish from the pan, drain on some kitchen paper and your fish is ready to serve together with your gorgeous potato chips!
 
Tip:  For extra flavour goodness, accompany the cod with some skordalia deliciousness! This creamy garlicky potato dip is the perfect partner to this dish!
