Melon and Mint Soup

Ingredients

300g melon
1 cucumber, peeled
100g yoghurt 0%
30 ml honey
20 ml lemon juice
Zest of 1 lime
6 – 7 mint leaves
40g prosciutto
20 ml olive oil
Salt
Pepper
Ice cubes

Method

1) Line a baking dish with parchment paper. Line prosciutto onto paper and bake for 8 minutes at 180C fan. Take it out of the oven, let it cool to become crispy.
2) Add melon, cucumber, yoghurt, honey, lemon juice, lime zest in a blender and beat well.
3) Add fresh mint and finally, add salt and pepper according to taste.
4) Add olive oil and ice cubes.
5) Serve and garnish with the prosciutto.
