Limoncello: An amazing lemon liqueur

Citrus trees are packed with delicious, juicy fruit during spring! What a better a way of using lemons to make our own homemade, famous Italian liqueur, limoncello?

Limoncello is a traditional liqueur made with lemons and it is a specialty of Southern Italy, the most famous, made in Capri. It is traditional served after dinner or as an aperitif.

Ingredients

10 lemons

1 bottle of vodka

3 ½ cups of water

2 1/2/ cups of sugar

Method

Using a peeler, remove the peel from the lemons in long strips. You can reserve the lemons for another use.  With a small sharp knife trim away the white pith from the lemon peels. Discard the pith. Place the lemon peels in a large pitcher. Pour the vodka over the peels and cover with plastic wrap. Steep the lemon peels in the vodka for 4 days at room temperature.

After the 4 days, stir the water and sugar in a large saucepan over medium heat until the sugar dissolves, about 5 minutes. Let it cool, then pour the sugar syrup over the vodka mixture. Stir and cover. Let it stand at room temperature overnight. The next day, strain the limoncello through a mesh strainer. Discard the peels. Transfer the limoncello to bottles, and seal the bottles and refrigerate until cold, for at least 4 hours and up to 1 month.

Serve chilled.
