A dish that will surly have the whole family together for Sunday dinner every time without fail!
120ml olive oil
2 kilos chicken thighs
2 onions, sliced in rounds
10-15 big mushrooms, cut in pieces
500g concentrated tomato juice
120ml red wine
2 tsp sugar
2 cinnamon sticks
Readymade chicken seasoning (or nutmeg, paprika and pepper)
2-3 bay leaves
Rinse and dry the chicken. Begin sautéing the onions in a large pot with the olive oil. Add the chicken and sauté.
Add the wine and let marinate for 5’-7’. Next add the tomato juice and the mushrooms. Mix well, adding the salt, sugar, cinnamon, chicken seasoning and bay leaves.
If the meat soaks up all the liquid, add another ½ cup of water. Cover and cook for 1 hour on low flame, or if using a pressure cooker, cook for 30’.
Serve the chicken along with a potato casserole or fries.
