Ingredients (4 portions)
400 gr seafood mix
2/3 cup chopped onion
6 tbsps chopped sweet red pepper
2 garlic cloves, minced
3 tsps olive oil
2 cups canned diced tomatoes, undrained
250 gr tomato sauce
6 tbsps dry red wine or chicken broth
3 tsps minced fresh oregano
3 tsps minced fresh parsley
1 1/2 tsps Worcestershire sauce
1/2 tsp crushed red pepper flakes
Method
In a large saucepan, saute the onion, red pepper and garlic in olive oil until tender. Add the tomatoes, tomato sauce, wine or broth, oregano, parsley, Worcestershire sauce and pepper flakes. Bring to a boil. Reduce heat; cover and simmer for 10 minutes. Add the seafood mix. Bring to a boil. Reduce heat; cover and simmer for 3 minutes or until shrimp turn pink, mussels get a nice dark orange colour and rest of seafood turns opaque.
