Black Eyed Pea Salad

Ingredients:

1/2 kilo black eyed peas

1 sweet red pepper, chopped into cubes

2 onions, finely chopped

1 leek, sliced into rounds

1 clove garlic, finely chopped

 2/3 cup fresh parsley, finely chopped

 

For the Sauce:

1/2 cup balsamic vinegar

1/2 cup olive oil

salt

pepper

 

Directions:

Boil the black eyed peas in a large pot for about 40 minutes. Drain and rinse them and dump them in a large salad bowl. Finely chop the vegetables and add them to the salad bowl. Mix well. In a small bowl mix the oil, vinegar, salt and pepper. Drizzle the sauce on this healthy salad and enjoy!
