Ingredients (4 servings):
4 turkey breasts
1 ½ cup shredded mozzarella
2 tbsp grated parmesan
4 thin pineapple rounds, from a can
½ tsp sweet paprika
¼ tsp garlic powder
Salt and freshly ground black pepper
2 tbsp olive oil
2 tsp chopped cilantro
1 tomato and 2 lettuce leaves for garnish
Preheat oven to 190 C. In a small bowl, combine sweet paprika, and garlic powder. Season the turkey fillet with salt and pepper. In a large ovenproof skillet over medium-high heat, heat the oil. Cook the turkey fillets on top side until golden, about 5 minutes. Remove from heat and sprinkle all over with seasoning mixture. Sprinkle tops of turkey with 1 cup mozzarella and parmesan. Arrange a pineapple round on top of each piece of turkey. Sprinkle with the remaining ½ cup mozzarella and the remaining parmesan. Bake until the cheese is melty and turkey is cooked through, about 10 minutes.
On a big platter we place the turkey fillets on lettuce leaves, with a tomato in the middle garnish with cilantro and serve.
