A Refreshing taste of Asia

Ingredients (4 portions)

50 gr rice noodles

1 mango, cut into chunks

1 bell pepper, cut into thin strips

A handful of peas

2 carrots, cut into thin slices

¼ cup cilantro, roughly chopped

For the sauce:

3 tbsps. soy sauce

2 tbsps. olive oil

2 tbsps. water

2 tbsps.  honey

2 tbsps.  mirin

2 tbsps. rice vinegar

1 cl. garlic, finely minced

I lime, its juice

Salt

Method

Soak the noodles in very hot water for about 10-15 minutes, or until they are soft. Keep a close eye on them after 10 minutes so they don't get mushy.

Combine all sauce ingredients in a large bowl and whisk to combine.

Add prepared noodles and toss to coat well with the dressing. Add the mangos, the green pepper, the peas, the carrots and the cilantro and toss gently.
