Totally Mouth-Watering Walnut Cookies!

Incredibly easy to make and absolutely delicious - delectable nutty cookies to please everyone!
 
What we will need: (for 36 pieces)
 
350g ground walnuts
 
2 eggs
 
1 cup granulated sugar
 
½-1 sachet vanillin
 
Ganache (optional):
 
100g dark chocolate or milk chocolate
 
75ml cream
 
1 tbsp. honey
 
Method:
 
Using a mixer, beat the egg whites until stiff.  Next, add your sugar and vanillin to the egg, little by little, continually beating for a few seconds.  The sugar will not blend in completely but this is what gives these walnut cookies their characteristic crispy texture.
 
In a blender, pulse the walnuts until they take on an almost powder or flour like consistency.   Add the walnut flour to the egg mixture and using a spatula, stir in a circular motion so that the mixture remains light and airy (not dense).  
 
Prepare your cookie sheet by lining a baking tray with non-stick parchment paper.  Then drop teaspoonful of batter onto the tray, making sure that they are evenly spaced as they will increase in size, and also gain height.
 
Bake the cookies in a preheated oven at 170 ° C for about 13 minutes. Once they take on a lightly golden colour and are slightly cracked at the top, they are ready.  Remove them from the oven and let them cool until they are crunchy.
 
For the ganache (which is optional of course), use a double boiler to melt the chocolate. Then add in the cream, and finally the honey, stirring continuously until you end up with a smooth, relatively think cream. Once your cookies have cooled down, dip a spoon or brush into the ganache and layer it onto the surface of the cookies creating whatever pattern you like.  Remember to store them in an airtight container.
 
Another delicious tip: You could create a cookie sandwich by pressing two cookies together with jam in the middle.  You could also add 1 to 2 tablespoons of cocoa or a drop of rosewater to your cookie mix, depending on your flavor preference.
