Champagne Jello Shots with Mandarin Oranges and Pomegranates for Good Luck (serves 6)

Start the New Year off right with the most sophistocated Jello shots around! Oh, how bubbly!
 
Ingredients:
4-5 mandarin oranges, peeled & free of white strands
500ml champagne (roughly 2 cups)
3 gelatin pieces
3 tbsp sugar
1 cup pomegranate seeds
 
Directions:
Chop the mandarin slices into small pieces, but not too small as to cause all the juice to disperse. Soak the gelatin in a bowl of cold water for 5’. Warm up half the champagne, and all of the sugar in a pot on the stove, stirring vigorously with a wooden spoon until all the crystals are fully dissolved. Remove the gelatin pieces from the cold water, and place into the pot with the champagne. Continue stirring until the gelatin is fully dissolved. Pour the rest of the champagne into the mixture and stir for a few moments more. Set aside to cool a bit.
 
Disperse the mandarin pieces into shot glasses, tiny champagne glasses, or even small bowls. Next, add the pomegranate seeds and then pour in the champagne mixture. Place the glasses or bowls into the refrigerator for 3 to 4 hours, or until the Jello has hardened. Serve with chilled champagne. 3...2...1...Happy New Year!
