It’s time for some winter soup!

How about preparing this delicious warming soup of Greek origin this week! It’s a traditional trahana soup with tomato and cheese!

 

Ingredients:

1 cup dry trahana (about 200 gr.)

500 g. Passata (tomato concentrate)

2 grated tomatoes

1 onion, finely chopped

200 g. cubed feta

Croutons

500 ml chicken stock

Salt and black pepper

 

Method:

Heat a little olive oil in a saucepan over medium heat. Add the onion and sauté for about 5 minutes until golden brown. Next, add your chicken stock, Passata, fresh tomato and trahana and mix well. Once the stock reaches a boil, lower your heat and let simmer for 15 minutes.  Don’t cover the pot.  Add salt and pepper to taste. Once the trahana has softened and the soup has taken on an almost porridge like consistency, it is ready to eat!  When serving, add some feta cheese and croutons on top and if you’d like, some more pepper.
