Quinoa Burger in a flash!

Quinoa, one of the so-called "super foods" is rich in protein, iron and magnesium, and has twice the amount of fiber than most cereals. 
 
In short it is so beneficial that we bring you an easy and delicious recipe to make – the infamous quinoa burger!
 
Ingredients: (Serves 4)
 
400 g. beans, cooked
 
2 cups cooked quinoa
 
1 cup button mushrooms, chopped and toasted
 
1/3 cup breadcrumbs
 
Two garlic cloves, crushed
 
¼ tsp dry oregano
 
Salt & Pepper
 
1 egg, slightly beaten
 
Method:
 
How to cook the quinoa: Put the quinoa in a saucepan with double the volume of water. Bring the water to a boil and then reduce heat, cover the pan and let the quinoa simmer for 15 minutes. Remove from the heat and set aside with the lid on for about 10 minutes. Once it’s dried out, fluff it up a little using a fork and let it cool. 
 
Next, preheat your oven to 180° degrees and brush your baking sheet lightly with some oil.
 
In a large bowl, mash your beans with a fork. Mix in the quinoa, the breadcrumbs, garlic, mushrooms and oregano, as well as your salt and pepper to taste. Then add the egg and mix until all the ingredients are properly combined.
 
For the next step, wet your hands slightly and mold your quinoa mix into 4 burger patties. For the best results, put the patties, covered, in the refrigerator and leave them there for 30 minutes before continuing.
 
Next, remove them from the refrigerator and place the patties in the oven for about 25-30 minutes until crisp (turning halfway).
 
Serve your burgers on a bun with cheese, tomato, lettuce and other topping of your choice!
