Enjoy the Games with these 3 Potato Skin Combos!

What better way to enjoy all things sports than with some super tasty Olympic bites! Like these epic potato skins prepared 3 ways! 
 

Potato Skins with Cheese & Bacon

Ingredients:
 
4 potatoes, peeled and wiped
 
2 tbsps. butter
 
2 cups cheddar cheese
 
4 slices bacon, fried and cut into cubes
 
2 tbsps. fresh herbs like rosemary or cilantro, coarsely chopped
 
Salt & Pepper to taste
 
Method:
 
Preheat oven to 200°C.  Pierce the potatoes all over with a fork, place in the oven and bake them for approximately 50 minutes until their skins are crisp and are easily pierced with a knife.  Remove from the oven and allow to cool for about 10 minutes. Turn the oven onto grill mode.
 
Next, cut each potato in half lengthwise and use a fork or spoon to remove the flesh, leaving a little intact.  Then brush the inside of the potatoes with some melted butter and season with salt and pepper.  Put back in the oven and grill for roughly 2-3 minutes until the skins begin to crisp. Then turn and grill for a further 2-3 minutes. Your potato skins are now ready!
 
Remove them from the oven and fill each skin with your cheese and bacon bits.  Place them under the grill for about 4-5 minutes until the cheese has melted and starts bubbling.  Remove from oven and garnish with your fresh herbs!
 

Potato Skins with Smoked Salmon & Cream Cheese

Ingredients: 
 
4 potatoes, peeled and wiped
 
2 tbsps. unsalted butter, melted
 
4 slices smoked salmon
 
For cream cheese mixture:
 
1 cup cheddar cheese
 
1 cup grated kefalotiri cheese
 
200 g. cream cheese 
 
½ cup sour cream
 
1 tsp smoked paprika
 
1/3 cup spring onion, chopped
 
Method:
 
For the cream cheese mixture. Place your three cheeses in a blender and mix.  Then, add your smoked paprika and sour cream and blend a little more until fully combined.  Put in a bowl and place in the refrigerator to chill.
 
Bake the potato skins according to the instructions in the first recipe.
 
Remove them from the oven and place a spoonful of this mixture into each skin and place a salmon slice on top.  Garnish with your chopped spring onion and voila, ready to serve!
 

Potato Skins a la Cyprus!

Ingredients:
 
4 potatoes, peeled and wiped
 
2 tbsps. unsalted butter, melted
 
1 cup cheddar cheese
 
1 cup halloumi cheese, cut into cubes
 
4-5 slices lountza, diced
 
1 large tomato, cut into cubes
 
6-8 black olives pitted and sliced
 
1 tbsp. olive oil
 
Basil leaves for garnish
 
Method:
 
Prepare the potato skins as instructed in the first recipe. 
 
In a bowl, mix your cheddar cheese, halloumi, lountza, tomatoes, olives and olive oil.  Then, place 1-2 tablespoons of this mixture into each potato skin and put in the oven to grill for about 3-5 minutes until the cheddar cheese has melted and the halloumi has taken on a golden brown colour!  
 
Remove from the oven and garnish with your basil.  Ready to eat!
