It's Pizza Time!

If you’re in front of t.v. following the football or even sitting on your balcony just chilling with friends, one of the easiest and quickest meals to make - and that goes perfectly with a cold beer or wine - is pizza!
 
We bring you 3 pizza combos below for you to choose from! And don’t forget, if you want to make your life that little bit easier, visit METRO supermarket where you will find ready pizza dough ready to be rolled into any shape you want or else some ready-round pizza bases onto which you can throw your toppings!
 

The Mediterranean!

If you like the egg and pizza, in particular the classic Egg Florentine pizza topped with spinach and a delicious soft-boiled egg cracked in the middle – then this is for you!
 
Ingredients: (For two pizzas)
 
4 juicy tomatoes
2 garlic cloves, chopped
1 small bunch of fresh oregano, chopped or 1 tsp dry oregano
80 g baby spinach
50 g parmesan cheese, grated
125 g mozzarella, cut into strips
4 large fresh eggs
 
Method:
 
Peel your tomatoes by scoring the skin, placing them in a bowl and pouring some hot water over them. Wait about 2-3 minutes and then drain the water.  The peels will now come off easily.  Grate the tomatoes and mix in your garlic and oregano.  Next, blanch the spinach.  You do this by soaking it in boiling water in a colander over the sink. Then allow it to cool and strain any excess water.  
 
Preheat oven to 220C.  Roll your dough out (round or square) or simply use two ready-made pizza bases.  Spread the tomato sauce over both and season. Next, add your spinach, grated parmesan and mozzarella strips.  Place the pizzas on a baking tray and put in the oven to bake for 5 minutes. Then, remove the pizzas from the oven and carefully push the toppings of each pizza to the side so as to create a gap in the center in which to break the eggs.   Place back in the oven to finish cooking for about 6-7 more minutes, depending on how you want your egg. And, dig in!!!

The Italian!

A wonderful pizza with Italian temperament! No tomato sauce – just decadent crispy bacon, artichoke and ricotta. Yum!!
 
Ingredients:
 
200 g ricotta or anari cheese
400 g artichoke hearts (packed, drained)
50 g black olives, halved and pitted
6 strips of bacon, cut into squares
 
Method:
 
Roll your dough out (round or square) or simply use a ready-made pizza base. Spread the ricotta over the base and then sprinkle your artichokes, olives and bacon on top. Season with any herbs of your choice. Preheat oven to 220C.  Place the pizza on a baking tray and place in the oven to bake for about 15-20 minutes or until the pizza base is crispy.  Sprinkle some basil or any herbs of choice on top and enjoy!!
 
The Italian
 

The Cypriot!

Halloumi is one of those cheeses that don’t melt making it ideal for pizza, especially this Cypriot infused pizza that’s out of this world tasty!
 
Ingredients: (for 1 large pizza)
 
4 juicy tomatoes
2 gloves garlic, chopped
1 small bunch of fresh oregano, chopped or 1 tsp dry oregano
125 g mozzarella, cut into strips
¼ halloumi cheese, cut into cubes
5-6 pieces lountza cut into cubes
 
Method:
 
Peel your tomatoes by scoring the skin, placing them in a bowl and pouring some hot water over them. Wait about 2-3 minutes and then drain the water.  The peels will now come off easily. Grate the tomatoes and mix in your garlic and oregano.  Preheat oven to 220C.  Roll your dough out (round or square) or simply use a ready-made pizza base. Spread the tomato sauce over the base and on to it scatter your mozzarella, halloumi cubes and lountza. Place the pizza on a baking tray and place in the oven to bake for about 15-20 minutes or until the pizza base is crispy.  Garnish with some basil or any other herb of choice on top! Dive in and enjoy!!

Tip: If you happen to not have any tomatoes at home, you could use pasta based tomato sauce, Passata or even tinned chopped tomatoes (plain or with onions), and then add your spices.
