In the Spirit of Eurovision!

This week is dedicated to Eurovision! So invite your friend’s over to enjoy the build-up and serve them up some of these delicious homemade snacks!  Two recipes, one for super easy pizza with homemade sauce and a second for spicy baked potatoes. Enjoy!
 

Easy Pizza with Homemade Sauce

 
Making the sauce
 
This aromatic sauce is very easy to make and will take you about 15 minutes to prepare.
 
Ingredients (for about 4 cups):
 
¼ cup. olive oil
 
2 tsp. chopped garlic
 
About 850 ml diced tomatoes (canned) or 7 ripe roma tomatoes without their seeds and cut into cubes.
 
1 tbsp. dry basil
 
½ tsp oregano
 
1 tsp salt
 
¼ tsp red pepper flakes
 
200 ml tomato paste
 
Method:
 
In a saucepan, heat the olive oil. Then, throw in the garlic and sauté until golden brown. Add your tomatoes, basil, oregano, salt and red pepper flakes. Simmer until juices evaporate slightly. This will take about 10 minutes. Add the tomato paste and cook for a further 3 minutes approximately. And, it’s ready!
 
Allow the sauce to cool before putting it on the pizza.
 
Tip: The sauce can be made in advance. Just let it cool down and then refrigerate it or store it in the freezer.
 

Making The Pizza

 
The pizza takes only 10 minutes to prepare and about 10 minutes to bake the pizza.
 
Ingredients (for 4 pizzas):
 
1 box pizza dough
 
2 cups homemade pizza sauce (see recipe above)
 
250 g. grated mozzarella
 
250 g. grated cheddar cheese
 
Optional: any other topping of your choice, for e.g. ham, shrimps, sausage, onion, pepper slices, etc.
 
Method:
 
Preheat oven to 250°C.
 
Prepare the pizza dough according to box instructions. Grease four trays and spread your pizza dough just enough to cover the entire surface.  Then, pour half to two thirds per cup of the sauce onto the dough, and spread well.
 
Next, sprinkle your grated cheeses on top of the sauce. At this point, you can also add any further toppings should you wish.  Bake for 10-12 minutes or until golden brown and the dough has become slightly crispy.
 

Spicy Potatoes In The Oven

 
Who doesn’t like potatoes?!! The following recipe is a healthier alternative to fried chips as they’re oven baked but just as decadent!
 
Ingredients:
 
4 large potatoes
 
A little olive oil
 
1 tsp. smoked paprika (or regular)
 
2 tsp. garlic powder
 
Salt and freshly ground black pepper, to taste
 
Method:
 
Preheat oven to 200°C.
 
Cut your potatoes any way you’d like - sliced, wedges, etc. And remember, there’s no reason to remove the peel, it gives extra flavor to potatoes. 
 
Coat a baking dish with olive oil and sprinkle the surface with salt, pepper and half the paprika and garlic. Then place your potatoes in the dish and brush them with a little extra olive oil (if you want to make your potatoes extra crispy, boil them for a few minutes before placing them the oven).  Sprinkle on some more salt and pepper, as well as the remaining paprika and garlic.
 
Bake in the oven for approximately 40-50 minutes (depending on the size of the chips and how crispy the like), turning half way.
 
Serve immediately!
